Food, glorious food!

Making this for dinner tonight: http://www.seriouseats.com/recipes/2010/03/eggplant-almond-enchiladas-recipe.html YUMMY! We'll see how it turns out.


Update: Geof. ate 3 helpings. Said it was really good. The kids poked around and June liked the corn tortilla. In the end, they opted for Grape-nuts. Ha! And I LOVED it (could have had a bit more sauce, but sooo yummy), especially the roasted almonds.

No MEAT!!!! Let me know if it is sooo good that Mike will forgive me for the meatless dinner! And I loved your last post in a wierd kind of way It made me cry and also made me wonder if I could do THAT. It also made me love my family more and of course; admire that man! Pretty amazing testimony but could I really do it?!?!?!? I once heard a saying that after ever hard trial in your life ask yourself what you are going to do next and the ending, bottomline answer is always "then God" And if you think about it that is true. when it is something out of your hands the only answer IS God. thanks for sharing!

I'm all for doing trying stuff without meat and a few time have been impressed by using different legumes instead of beef, but I draw the line at eggplant. That is one of those plants, i.e. beets, where I have no idea why someone would pick that up off of the ground and think "hey, this looks like something I'll put in my mouth."
Saying that, was the sauce good? Never thought about having almonds in enchiladas. Do you think this could this be made with beans instead of that weird crime against nature known as the eggplant? (Please, it doesn't taste or look like an egg so let's not call it an eggplant. That's so misleading. Can I cook up this plant and have a runny yoke? No.)

Aaaah Jordan, you funny guy. (; Geof. doesn't usually favor (at all) eggplant, but he really enjoyed this! He did make fun of me more than once for even attempting this dish on the kids. The almond flavor was so nutty and mmm, mmm..good! Miss you guys, too!

Darla, my home teacher and his wife have a giant garden and just promised to bring me eggplants on Sunday. Can't wait to use this recipe!!
